Take the steak cubes out of the refrigerator 20 minutes prior to cooking to reach room temperature; pat them completely dry with paper towels and season generously with salt and pepper.

To make the whipped feta: In a food processor or high-speed blender, combine the feta cheese, softened cream cheese, extra virgin olive oil, lemon juice, lemon zest, and dried oregano. Pulse until the mixture is completely smooth and airy. Set aside in the fridge.

Heat a large cast-iron skillet over high heat. Add the avocado oil. Once the oil creates wisps of smoke, add the steak bites in a single layer (do this in batches if necessary to avoid steaming the meat).

Sear for 2 minutes undisturbed to get a golden crust, then flip and cook for another 1-2 minutes for medium-rare.

Reduce heat to low. Add the butter, minced garlic, and rosemary to the pan. Baste the steak bites in the garlic butter for 1 minute until fragrant.

To assemble, spread a generous layer of the whipped feta onto a serving platter. Pile the warm garlic-butter steak bites on top.
