Garlic Butter Smashed Radishes with Parmesan Crust
If you've been on the Keto journey for more than a week, you've likely hit that specific craving: potatoes. The fluffy, starchy comfort of a roasted potato is hard to replicate, or so I thought until I discovered the magic of cooked radishes. Raw radishes are peppery and crisp, but when you boil and roast them, a chemical transformation occurs. The peppery bite vanishes completely, replaced by a tender, mellow sweetness that is shockingly similar to a baby potato. These Garlic Butter Smashed Radishes are the ultimate low-carb side dish hack. By smashing them, we create more surface area for the garlic-herb butter to soak in and for the oven to crisp up. Topped with a golden, salty Parmesan crust, these little gems are high in healthy fats, incredibly low in net carbs, and are guaranteed to fool your tastebuds. Whether you serve them alongside a juicy steak or a roasted chicken, this recipe is a game-changer for your Keto dinner rotation.
The Masterplan
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
Bring a large pot of salted water to a boil. Add the trimmed radishes and boil for 10-15 minutes, or until they are fork-tender but not falling apart.
Drain the radishes and pat them thoroughly dry with a kitchen towel. This step is crucial for crispiness.
Arrange the radishes on the baking sheet. Using the bottom of a sturdy glass or a potato masher, gently press down on each radish to smash it flat until the skin bursts, keeping it mostly intact.
In a small bowl, whisk together the melted butter, olive oil, minced garlic, onion powder, salt, and pepper.
Generously brush or spoon the garlic butter mixture over each smashed radish.
Roast in the preheated oven for 15-20 minutes until the edges begin to brown and crisp up.
Remove from the oven and sprinkle the grated Parmesan cheese over the top of each radish.
Return to the oven for another 5-8 minutes, or until the cheese is melted and golden brown. For extra crunch, broil for the last minute.
Garnish with fresh parsley and serve hot.
